I wish Apple TV would have Japanese with English subtitles for all anime.

It's strange that there isn't an accepted standard where both English and Japanese are available for both audio and subtitle tracks. Why not cater to everyone? Come to think of it, any-and-all dubbed content should include the original audio by default.

This is really one of the downsides for not having a "tv anywhere" type service. There are several foreign movies that I have that I purchased on one service that does not have the alternate audio, but the audio is available on another service. It's often not a dealbreaker, but it's nice to be to have options.
