You just put woodchips in it and it goes.
If you have a really big brisket, hang it from the top vertically, until it shrinks enough to lay on a rack normally.
It goes all the way down to 100*F, so you can smoke cheeses and other delicate items that would melt in a pellet smoker.
They have a bunch of other Cuisinart stuff too
